For good value in Champagne, it's wise to look out for small family producers. This is a lovely rich style from a House founded in 1951 by Henry Nicolo. That was in the Côte des Bar, where they are still centred - in the south of Champagne, with vineyards on south-facing slopes, and chalk, marl and limestone soils. Third-generation David Nicolo is at the helm today and had the foresight to take another Côte des Bar family estate, Champagne Camille Paradis, into the fold in 2013. They pride themselves on their sustainable methods in the vineyards, growing the traditional Pinot Noir, Pinot Meunier and Chardonnay, as well as a tiny patch of Pinot Blanc. Lovingly crafted and aged 3 years in the cellar, this is a delightful fizz.
