Description
Based in the heart of Gevrey-Chambertin, this estate is run by Florence and her husband Simon, who first adopted organic methods, swiftly followed by biodynamic practices too. This is indicative of the painstaking level of care they adopt in the vineyards, also evident in the winery. The skilled husband and wife team favour the use of whole bunch fermentation (50% in this wine), tailoring the fermentation of each cuvée according to its needs.
