Paolo Masi took over the family's Tuscan estate in the early 1990s and we have been buying from him ever since. He is a slave to perfection and his wines have won many top awards, including a Trophy at Austria's Wine Challenge for best Sangiovese. Every year, he makes a tiny amount of his vin santo from his top, estate-grown Trebbiano di Toscana and Malvasia grapes, drying them for five months on racks, squeezing out the trickle of juice and fermenting in small casks called caratelli for five years! No wonder this sweet wine has so much richness and complexity. Honeyed with candied fruits, caramelised orange, peach and apricot, with zesty freshness. Sip and savour slowly on its own, with blue cheese, a creamy tart or chocolate desserts.
