From a family long established in Chablis, Samuel Billaud started his winemaking career at their own Domaine Billaud Simon estate in 1985. Deciding in 2009 to set up on his own, he started out by buying in top-quality grapes, before inheriting some prized Premier Cru vineyards from his father. Today, he has carved out a reputation as a leading figure in Chablis. Les Grands Terroirs is a village Chablis, using grapes from three separate vineyards - Les Pargues, Les Cartes and Chapelot. Organic farming, early picking, minimal use of oak and long lees ageing lend a richness and breadth to the wine, whilst retaining the core of intensity and freshness. For drinking now, open early or cellar a while longer. Tops with salmon en croûte.
