The Shimano M540 is a really popular mid-range SPD pedal. Its slimmer and lighter than the M520 and significantly cheaper than the top end XT and XTR pedals. The M540 is a mountain bike pedal designed mainly for cross country and trail riding. Its double sided so its really easy to get your foot in and out of and it sheds the mud really well in the winter.
